Red Velvet Cake with a Hint of Coffee

Ingredients
  

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tbsp cocoa
  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 eggs
  • 1 cup buttermilk
  • 2 tsp vanilla
  • 2 oz red food coloring
  • 1/2 cup plain prepped hot coffee
  • 1 tsp white vinegar
  • FROSTING
  • 4 8oz blocks cream cheese
  • 2 sticks butter
  • 4 cups powdered sugar sifted
  • 2 tsp vanilla
  • 1 cup toasted pecans

Method
 

  1. divide into 2-9" cake pans
  2. bake at 325 degrees for 30-40 minutes
  3. layers will be tender, may need to freeze or refrigerate to handle
