- 3 cups ap flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp pumpkin pie spice
- 2 cups sugar
- 1 1/2 cups oil
- 3 eggs
- 2 tsp vanilla
- 1 splash roasted pecan oil
- 3 cups apple finely diced
- 1 cup nuts I prefer pecans
- CAKE GLAZE
- 1 stick butter
- 1 cup evaporated milk
- 1 cup brown sugar
- 1 tsp vanilla
- 1 pinch salt
- 1 splash roasted pecan oil
Combine flour, soda, salt, sugar, spices, eggs, and oil; mix well.Add eggs one at a time beating after each.Add vanilla, apples, and nuts.Pour into a 13 X 9 baking pan. Bake at 325° for 1 1/2 hours or until done. It only takes an hour in my oven. Pour glaze on while cake is still hot.GLAZECombine all glaze ingredients in a small saucepan; bring to a boil and boil for 2-3 minutes. Pour over hot cake.
